According to this book, butternut squash is a superfood in winter that is packed with immunity boosting vitamins A and C to fend off colds. Here is a recipe inspired by this book: Slice a butternut sqash in half lenghtwise, spoon out the seeds. Drizzle 2 tablespoons of maple syrup and a dash of cinnamon. Bake at 350F for 30 minutes. This makes a great side dish to a winter meal.
